A whistle-stop tour of cheese making through the ages, with Academy of Cheese Education Project Manager, Katy Fenwick. Katy will be exploring the birth of some of the world’s best-known cheeses. Learn how location, society and economic necessity shaped cheese making decisions and gave us the delicious cheeses we know and love today

A whistle-stop tour of cheese making through the ages, exploring the birth of some of the world’s best-known cheeses. Learn how location, society and economic necessity shaped cheese making decisions and gave us the delicious cheeses we know and love today.

We will taste and discuss the history behind some iconic cheeses. We will look at how the weight of salt impacted Gruyere and why we have the Americans to thank for Cloth-bound Cheddar. We ponder questions such as were the monks making Epoisses amongst our first dairy scientists? And how did those Mozzarella milk producing Asian buffalo end up in Italy?
